It is one of the “Natural Sake Series 〇△□” from Yamana Sake Brewery, ” ◯Hi-sake (sake of Sunny)”.
◯Hi-sake(sake of Sunny) is a jummai ginjo made from Yamada Nishiki which is the best sake rice.
Hyogo Prefecture, where Yamana Shuzo is located, produces about 60% of the production of Yamada Nishiki.
The brewery is made with only Yamada Nishiki which Shinichi Koseki organically cultivates in Hyogo Prefecture, the home of the rice.
There are an extremely low number of sake made only from rice cultivated by a farmer.
When the sake is chilled, the fragrance becomes light and the taste is refreshing and smooth.
When you leave the sake on the table for a short time while eating, the taste will swell and the subtle sweetness of the rice will come out.
It goes well with fish dishes as well as simple meat.
