It is one of the “Natural Sake Series 〇△□” from Yamana Sake Brewery, ” □Tsuchi-sake(sake of Earthen)”.
□Tsuchi-sake(sake of Earthen) is a jummai ginjo made from Gohyakumangoku which is popular sake rice.
The brewery is made with only Gohyakumangoku which Miyagaki Farm organically cultivates in Tanba City, Hyogo Prefecture, same town as Yamana Brewery .
There are an extremely low number of sake made only from rice cultivated by a farmer.
It would taste like pure water when it is chilled.
And when you leave the sake on the table for a short time while eating, the taste will swell and you can feel the five tastes, sweetness, sourness, pungency, bitterness, and astringency.
It goes well with fish dishes with a refreshing taste. So does with sushi.
